Caramelized Onion & Mushroom Quinoa

Use a cup of quinoa for this side dish and cook it according to the package directions.

In a separate skillet, combine olive oil, sliced onion, mushrooms, and garlic. Cook for 10 minutes, or until the onion is golden brown. Now add the quinoa and cook for another 2 minutes.
